WHISKEY SWEET POTATOES

6 small sweet potatoes ½ t. coarse salt, or to taste

1/8 t. coarse black pepper

Whiskey sauce:

5 T. brown sugar 1 T. whiskey 1 T. honey 2 T. oil Preheat oven to 425 degrees. Place sweet potatoes on a baking tray. Bake for 20 minutes. Slice sweet potatoes in half.

Prepare the whiskey sauce: In a small saucepan, combine brown sugar, whiskey, honey and oil. Cook over medium heat until sugar is dissolved, 1-2 minutes. Brush sauce over cut sweet potatoes and season with salt and pepper.

Return sweet potatoes to the oven and bake, uncovered, for an additional 20 minutes. Yields 4-6 servings.
