TANGY TILAPIA NUGGETS

1 lb. tilapia fillets, cut into nuggets 1-2 eggs ¾ cup bread crumbs 5 T. oil, divided Tangy sauce:

½ cup apricot jam Ketchup ½ cup teriyaki sauce 2 t. garlic powder 1 T. vinegar Preheat oven to 350 degrees. Lightly beat eggs in a shallow dish. Place bread crumbs into a second shallow dish. Dip nuggets into eggs, then coat with bread crumbs.

Heat half the oil in a sauté pan over medium heat. When hot, add nuggets in batches and fry until bread crumbs are toasted, about 2 minutes per side. The fish does not need to be further cooked at this point. Place nuggets into a baking pan.

Prepare the sauce: In a small bowl combine apricot jam, ketchup, teriyaki sauce, garlic powder and vinegar. Pour over tilapia nuggets. Bake for 15-20 minutes (the sauce should appear to have thickened). Yields 20-30 nuggets.
